Hands on cooking classes occur through out the year at the Battenkill Kitchen.

News from the Battenkill Kitchen
The Battenkill Kitchen, Inc. (BKI), a not- for-profit organization located in Salem, Washington County, is a commercial shared use kitchen facility which has been open since 2004.  A goal of the BKI is to provide the agriculture community a place to process large volumes of a value added product using their own farms product.  Producers rent the kitchen facilities in order to create products to be sold such as jams, mustards, baked goods, BBQ sauce, pastry lard, and much more. 

The commercial equipment includes: a 40-gallon steam kettle, a 40-quart stand mixer, a six burner gas range, a convection oven, two baking ovens, a wa1k-in cooler, rolling stainless steel food preparation tables, and commercial dishwasher.

The BKI also hosts a variety of cooking classes through out the year.  The next cooking class will be held on June 13 from 10:00 - 2:00 pm and will feature Mediterranean Cooking with Joyce Goldstein.  Joyce Goldstein is a former executive chef of Chez Panisse, founder of Women's Chefs of America, award winning chef/owner of Square 1 in San Francisco, Board Member of the James Beard Foundation, and author of several cookbooks.  Joyce will be giving class participants a culinary tour of the Mediterranean using fresh, local produce and teaching hands-on the process of bringing these flavors into your home kitchen. Admission price of $110 includes one signed cookbook from Joyce Goldstein.  

The BKI is pleased to announce it’s 2009 Board of Directors including: Mary Ann Marschhauser (President); Bruce Ferguson (Vice President); Paula Schafer (Secretary); Charlie Burd (Treasurer); Karen Hess, Judy Provo, Dottie Schneider and Bob Nopper.
