Why eat a colorful diet?

Deeply colored fruits and vegetables are beautiful and rich in flavor - and also a vital part of a healthy diet. That's not only because dark green, deep red, purple, and bright orange or yellow plant foods tend to have the most vitamins and minerals, but also because the pigments - the stuff that makes carrots and pumpkins orange and plums purple - may themselves protect against chronic diseases such as heart disease and cancer. Continue to eat and enjoy your lighter-color produce to add variety to your diet, just favor the dark or vividly colored produce.
