Food Safety Training for the Food Service Industry
in Onondaga County
Cornell Cooperative Extension of Onondaga County provides a comprehensive, flexible food safety training program with courses and training sessions designed to meet the needs of local foodservice operations.
Courses:
EFNRA Certification Course - this updated, HACCP-based food safety course is widely-recognized as one of the most comprehensive and practical programs currently available. This course is designed for owners, chefs, managers, supervisors, and employees with supervisory capacities and foodservice experience. Each participant is provided with a course book and supplementary materials.

EFNRA Introductory Course - this non-certification, HACCP-based course provides "basic training" for new employees and/or individuals with minimal foodservice experience. Each participant is provided with an employee-guide workbook and supplementary materials.
Training Sessions:
1.5-hour training session - conducted on site at your facility, this training is focused on basic foodservice sanitation concepts. Topics include proper hand-washing, glove use, hygiene, food thermometers, temperature danger zone, and cleaning and sanitizing of equipment and dishware. Appropriate for all employees.
3-hour training session - conducted on site at your facility or at CCE-Onondaga County's Education Center, this training covers the 1.5 hour training topics in greater detail with a focus on safe food practices through all phases of operation - from delivery to leftovers. Appropriate for all employees.
